Christmas Gingerbread Cookies


Hey Blogger Nation!
So I'm now officially finished college for Christmas so I started baking during last weekend and I was practicing some baking with cookies and thanks to my wonderful mum she found a great cookie recipe from one of our books we have called Cakes for romantic occasions.
Ingredients:
  • 6oz butter
  • 7oz caster sugar
  • 2 large eggs
  • 14oz plain flour
  • 1tsp baking powder
  • 1/4 teaspoon of ginger


Method
  1. Pre heat oven for 180oC.
  2. Cream butter and  sugar until pale and creamy.
  3. Beat the eggs into the sugar/butter mixture.
  4. Sift the plain flour, baking powder and ginger into the mixture and mix on a low speed with mixer until dough forms.
  5. Cut half of the dough and cling film both and place into fridge for an hour, or if you don't have the time place it into the freezer for 10 minutes.
  6. Place one dough ball onto floured surface and roll out about 0.5cm thick
  7. Using whatever cutter you want to cut out cookie shapes and repeat again with the rest of the dough.
  8. Place the cookies on a grease proof paper on tray bake for 12-15 minutes but spread all the cookies away from each other as they may get stuck together.
  9. When cooled remove from tray from oven and use a palette knife to lift cookies.
  10. Then ice them or just leave them plain!
